How to Make a Savory Short Rib Pie

A comforting and delicious savory short rib pie. A combination of tender short ribs and flaky pastry that make this dish a crowd-pleaser.


Ingredients


Short ribs

  • 2 pounds Boneless short ribs

  • TT Salt and pepper

  • 1 Tbsp. Tallow or blended oil

  • 1/2 cup Celery

  • 1/2 cup Carrots

  • 1 cup Sweet yellow onions

  • 3 Tbsp. minced Garlic

  • Herbs: Rosemary, thyme, sage (optional)

  • 32 oz. Beef broth (more if needed)

  • 1/2 cup Flour

Pie dough

  • 1 1/2 A.P Flour

  • !0 Tbsp. unsalted butter

  • 2 Tbsp. Apple cider vinegar

  • 1/4 cups cold water

  • 3 Tbsp. granulated sugar

  • 1 1/2 tsp cornstarch

  • 1/2 tsp salt



Instructions:


Preparing the Short Ribs

  • Season short ribs with salt and pepper and set a side at room temperature for one hour. (This will allow the meat to cook evenly.)

  • Heat in a sauté pan or Dutch oven, add tallow or blended oil. allow oil to heat until you see ripples in the oil.

  • sear short ribs and brown on all sides, dice into large cubes, and set aside. Cooking the Vegetables

  • All vegetables are cut at medium dice.

  • sauté Carrots, celery, onions in tallow. Sweat vegetables, add flour and garlic. season with salt and pepper while adding broth. whisk and taste, add more broth if stew is too thick. Combining the Ingredients

  • Combine the short ribs, vegetables, create a flavorful filling. Once combined, place in the oven at 350 degrees for 3 hours or until fork tender. Allow to cool before adding to your pie. Assembling the Pie

  • Combine flour, butter, salt, vinegar, in a food processor. Add water while mixing. Scraping side when needed, once the dough looks like craters its ready.

  • Shape your dough into two balls. Once shaped, cover balls in plastic wrap and place in the refrigerator for 15 minutes.

  • Rolling dough into flatten rounds and add one round to pie tin.

  • once shaped, add your filling. Top your pie with pie shell, once topped, fluting the edges unit complete. Add egg yolk and water on top of you pie. set in refrigerator for an hour before baking. Baking the Pie

  • bake pie in your oven at 350 degrees for 30 minutes or until golden brown. Allow to cool down before serving.
